Vegetarian food can be just as good! - If you've recently
stopped eating meat or other animal products, congratulations! Your
body will continue to thank you for this healthy choice for years to
come. If you're struggling to find new recipes or alter some of your
favorite recipes that include meat or other items you're trying to
eliminate, a few ideas and substitutions can make for some delicious
meals.
For instance, instead of any meat product, you can try a
vegetarian or vegan option such as veggie burgers, soy chicken or soy
crumbles, tofu, or even eggplant and Portobello mushrooms, which can
create an excellent, flavorful, and healthy "burger". You can even
make a "Tofurkey" for Thanksgiving! If a recipe calls for chicken or
beef stock, use vegetable stock instead. And if you're looking for
another protein source or something with great texture and crunch,
include more healthy nuts such as almonds and walnuts in your diet,
into your vegetarian recipes.
If you're eating a vegan diet and need to eliminate milk and dairy
products, try various (and tasty) options such as rice, soy, almond,
or hemp milk. You can also use pureed tofu or soy eggs to replace eggs
in recipes. In addition, many markets and co-ops now carry a variety
of soy yogurt, cheese, and other products.
Likewise, if you're looking to reduce unhealthy trans fats, substitute
applesauce, pureed beans, and canned pumpkin for oil or
butter. Instead of sugar, try agave nectar and instead of salt, use a
little kelp.
Finally, if you're considering a gluten-free diet as well, look for a
variety of gluten-free baking mixes, flours, and cereals now
available. And remember, fruits and vegetables never contain gluten,
meat, or dairy products, so enjoy them to your heart's desire!
Bookstores and websites also carry books, magazines, and blogs with
good ideas for great vegetarian recipes and substitution
options. Eating healthy doesn't mean you won't enjoy your meals,
rather vegetarian eating can taste - and feel -- great.
